Ingredients:

  • 300g of flour

  • 150g of lard

  • 150g of sugar

  • 3 eggs

  • 1 sachet of baking powder

  • 500g of sheep's ricotta

  • 150g of dark chocolate

  • 100g of powdered sugar

  • Grated zest of one orange

  • Candied fruits and cherries for decoration

  • A pinch of salt


Instructions:

  • 1. To prepare the Minne di Sant'Agata, start with the shortcrust pastry. In a bowl, mix the flour, lard, sugar, one egg, and a pinch of salt. Add the baking powder and work the mixture until you get a smooth and soft dough. Wrap the dough in cling film and let it rest in the refrigerator for about 30 minutes.

  • 2. In the meantime, prepare the filling. In another bowl, mix the sheep's ricotta, powdered sugar, chopped dark chocolate, and grated orange zest. Work the mixture until you get a thick and smooth cream.

  • 3. After the dough has rested, preheat the oven to 180°C (356°F). Roll out the shortcrust pastry on a floured work surface to a thickness of about 3-4 mm. Using a round pastry cutter, cut out pastry discs and line buttered and floured single-portion molds with them.

  • 4. Fill the molds with the ricotta mixture, leveling the surface well. Cover with another disc of shortcrust pastry, sealing the edges well with a fork. Brush the surface of the Minne with a beaten egg and bake for about 30-35 minutes, until they are golden.

  • 5. Once ready, let the Minne di Sant'Agata cool on a rack and, when they are completely cold, decorate with powdered sugar, candied fruits, and cherries, following the Catania tradition.
