PicchiPacchi with Tomato Sauce


Ingredients for PicchiPacchi:

  • 500g of durum wheat flour

  • 200ml of water

  • Salt to taste

  • Extra virgin olive oil


Ingredients for Tomato Sauce:

  • 500g of ripe tomatoes

  • 1 onion

  • 2 cloves of garlic

  • Fresh basil

  • Salt and pepper to taste

  • Extra virgin olive oil


PicchiPacchi Preparation:

1. In a bowl, mix durum wheat flour with water and a pinch of salt until you get a homogeneous dough.

2. Knead the dough on a floured surface until smooth and elastic.

3. Cover the dough with a cloth and let it rest for about 30 minutes.

4. Divide the dough into small balls and roll them out with a rolling pin to obtain thin sheets.

5. Cut the sheets into wide strips and fry them in plenty of extra virgin olive oil until golden. Drain them on paper towels to remove excess oil.


Tomato Sauce Preparation:

1. In a pot, heat some extra virgin olive oil and add chopped onion and crushed garlic cloves.

2. Add chopped tomatoes and cook over medium heat until the tomatoes break down.

3. Add fresh basil, salt, and pepper and simmer over low heat for about 20-30 minutes, until you get a thick and flavorful sauce.


Serving:

1. Serve the PicchiPacchi with hot Tomato Sauce.

2. Garnish with fresh basil.

Ingredients:

- 500g durum wheat flour

- 200ml water

- Salt to taste

- Extra virgin olive oil

2. Knead the dough on a floured surface until it becomes smooth and elastic.

3. Cover the dough with a cloth and let it rest for about 30 minutes.

5. Cut the sheets into wide strips and fry them in abundant extra virgin olive oil until golden. Drain them on paper towels to remove excess oil.
