  • 1 large fennel bulb

  • 2 oranges

  • 1 garlic clove

  • 50 g of pine nuts

  • 100 g of salted sardine (or another type of salted fish)

  • Extra virgin olive oil

  • Wine vinegar

  • Salt and pepper, to taste


1. Prepare the Fennel: Thinly slice the fennel and place it in a bowl of ice water to crisp.

2. Toast the Pine Nuts: In a dry pan, toast the pine nuts over medium heat until golden, being careful not to burn them.

3. Prepare the Oranges: Peel and slice or segment the oranges, removing any seeds.

4. Prepare the Salted Sardine: If the sardine is very salty, soak it in water for a few hours before use. Then drain and chop.

5. Assemble the Salad: Drain the fennel and place it in a large bowl. Add the orange slices, toasted pine nuts, chopped sardine, and a crushed garlic clove (to be removed before serving).

6. Dress the Salad: Add extra virgin olive oil, wine vinegar, salt, and pepper to taste. Gently mix the salad to combine all the ingredients.

7. Serve: Remove the garlic clove and serve the salad fresh. Garnish with fennel leaves for a decorative touch.
